This mother-in-law sounds very much like the entitled type. She thinks that she knows best and refuses to listen to what anyone else has to say. You can get away with that when it is something that is your own personal business (although it's always best to listen to differing opinions) but, when it is something that isn't your call, you need to leave well enough alone.

Smart of mom not to want to leave her kid in this grandmother's hands. Probably time for the husband to step in and deal with his mother.
